Chicken Satay with Peanut Sauce
Description
This recipe for Chicken Satay involves coating chicken strips with peanut oil and a blend of spices including ground cumin, kosher salt, ground ginger, and curry powder. After marinating briefly in the refrigerator, the chicken is threaded onto skewers and grilled over medium-high heat until cooked through, resulting in tender, flavorful meat with a slight char.
The accompanying peanut dipping sauce is prepared by simmering a mixture of creamy peanut butter, soy sauce, rice vinegar, honey, minced garlic, sriracha, and water until thickened and then cooled. This sauce offers a creamy texture and a balance of sweetness, acidity, and mild heat that contrasts the grilled chicken.
The satay can be cooked on an outdoor grill or a grill pan, or alternatively baked in the oven if grilling is not an option. This flexibility allows for preparation based on available equipment while maintaining the essence of the dish.
