Description
The skewers begin with boneless, skinless chicken breast pieces and thick bacon strips cut to similar sizes for even cooking. The chicken and bacon are alternated on wooden skewers, which are soaked first to prevent burning. A seasoning of salt and pepper is added before grilling.
The chipotle barbecue sauce blends sweet barbecue sauce, chunky apple butter, and smoky canned chipotle peppers pureed smooth. After initial grilling on medium heat to cook the chicken through, the skewers are brushed with this sauce and grilled further to caramelize the glaze and crisp the bacon's edges without burning.
These skewers offer a mix of smoky, sweet, and slightly spicy flavors along with a pleasing contrast in texture from the tender chicken and crisp bacon. They can be served warm as appetizers or main dishes.
For indoor cooking, the oven method uses high temperature baking on a foil-lined sheet with sauce brushed on, producing similar results when grilling is unavailable.
Ingredients
- 1 1/2 pounds chicken breast boneless skinless
- 8 Bacon thick cut strips
- 1 cup barbecue sauce sweet
- 2/3 cup apple butter Musselman's brand
- 2 chipotle peppers (canned in adobo sauce)
Instructions
- Soak 8 wooden skewers in water for at least 30 minutes. Preheat the grill to medium or medium-low heat. (Between 300-350 degrees F.) Cut the chicken breasts into 3/4 inch bite-sized pieces. Then cut the bacon into 3/4 inch strips. Alternate threading the chicken and bacon onto 8 skewers, leaving a bare handle on one end of each skewer. Sprinkle the chicken skewers with salt and pepper.
- Place the bbq sauce, Musselman’s Apple Butter and chipotle peppers in the blender. Puree until smooth.
- Grill the chicken skewers for 4 minutes per side. Then brush the skewers with the chipotle apple bbq sauce and grill another 3-4 minutes per side, until the edges of the bacon is crisp, but not burned. Serve warm.
Notes
- Soak wooden skewers in water for at least 30 minutes before threading to reduce the risk of burning on the grill.
- Oven baking is an alternative: bake skewers at 450°F for 15-20 minutes, brushing with sauce before and during baking.
- Grill over medium heat around 300-350°F to cook chicken fully while crisping bacon edges without burning.
