Description

Ingredients
- 4 chicken breast cubed into 1-inch cubes, about 1 ½ lbs, boneless skinless

Marinade
- ⅓ cup olive oil
- 3 tablespoons lemon juice about 1 lemon, fresh
- 3 cloves garlic crushed
- ½ teaspoon oregano dried
- ½ teaspoon salt or to taste

Instructions
- In a medium bowl or freezer bag, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken (and onion if using) and toss well to coat.
- Refrigerate and allow to marinate for at least 30 minutes or up to 4 hours.
- Soak wooden skewers in water for at least 30 minutes.
- Remove the chicken from the marinade allowing excess to drip off. Discard the marinade and thread the chicken (and onion if using) onto skewers.
- Preheat a grill or a grill pan to medium-high heat. Add the skewers, turning frequently, and cook for 10 to 15 minutes or until chicken is cooked through and reaches 165°F.
Notes
- Onion pieces can be added to the skewers for additional flavor if desired.
- To cook in the oven, broil the skewers 4-5 inches from the heat for about 5-6 minutes per side until cooked to 165°F.
- Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
- The recipe accounts for discarding excess marinade before threading chicken to ensure proper grilling.
