Description

  • 4 chicken breast cubed into 1-inch cubes, about 1 ½ lbs, boneless skinless
  • ½ onion optional

Marinade

  • cup olive oil
  • 3 tablespoons lemon juice about 1 lemon, fresh
  • 3 cloves garlic crushed
  • ½ teaspoon oregano dried
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper

Instructions

  1. In a medium bowl or freezer bag, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken (and onion if using) and toss well to coat.
  2. Refrigerate and allow to marinate for at least 30 minutes or up to 4 hours.
  3. Soak wooden skewers in water for at least 30 minutes.
  4. Remove the chicken from the marinade allowing excess to drip off. Discard the marinade and thread the chicken (and onion if using) onto skewers.
  5. Preheat a grill or a grill pan to medium-high heat. Add the skewers, turning frequently, and cook for 10 to 15 minutes or until chicken is cooked through and reaches 165°F.

Notes

  • Onion pieces can be added to the skewers for additional flavor if desired.
  • To cook in the oven, broil the skewers 4-5 inches from the heat for about 5-6 minutes per side until cooked to 165°F.
  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
  • The recipe accounts for discarding excess marinade before threading chicken to ensure proper grilling.
