Chicken Spinach Artichoke Casserole

Ingredients

  • 16 ounces pasta I used rigatoni, uncooked
  • 2 cups chicken cooked, diced
  • 2 cups Italian cheese blend divided, shredded
  • 2 cups baby spinach
  • 2 (8-ounce) artichoke hearts drained, quartered, canned

Garlic Alfredo Sauce

  • ½ cup butter unsalted
  • 2 cups heavy whipping cream
  • 4 ounces cream cheese
  • ½ teaspoon garlic minced
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup Parmesan Cheese grated

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Lightly spray a 9 x 13 x 2-inch baking dish with nonstick cooking spray and set aside.
  2. Cook the pasta in a large pot according to the directions on the package and drain. Combine the pasta, diced chicken, 1 cup of the Italian cheese blend, spinach, and artichokes in a large bowl. Set aside.
  3. Add the butter, heavy whipping cream, and cream cheese to a medium saucepan. Whisk over medium heat and whisk until melted. Add the minced garlic, garlic powder, Italian seasoning, salt, and pepper. Continue to whisk until smooth.
  4. Whisk in the grated parmesan cheese. Bring to a simmer and continue to cook for about 3-5 minutes or until it thickens.
  5. Pour the alfredo sauce over the pasta mixture and toss to coat everything evenly. Pour into the prepared baking dish and top with the remaining 1 cup of Italian blend cheese.
  6. Cover with foil and bake for 30 minutes or until cooked throughout and bubbling on the sides. If you like the top browned, remove the foil during the last 5 minutes or so of baking.
