  • 1 - 2 Tablespoon extra virgin olive oil
  • 4 garlic chopped, divided, cloves
  • 8 jalapeno pepper chopped, divided, slices
  • salt to taste
  • black pepper to taste
  • 2 chicken breast sliced
  • 1 yellow onion medium
  • 1 red bell pepper sliced
  • sesame seeds for garnish (optional)

Stir Fry Sauce

  • 1 Tablespoon honey
  • 1 Tablespoon fish sauce
  • 1 Tablespoon orange marmalade
  • ½ Tablespoon coconut sugar
  • 1 Tablespoon water

Instructions

  1. Heat oil over medium-high heat. Add 3 chopped garlic cloves and 4 chopped jalapeno pepper slices to the skillet and saute for about 30 seconds.
  2. Add sliced chicken strips to skillet and saute for about 5-7 minutes or until cooked through while turning chicken to brown on both sides.
  3. After chicken is cooked, add sliced strips red bell pepper and onion. Stir well, cover with a lid and saute for about 3 minutes, stirring occasionally, making sure nothing sticks to the pan. Add a little bit of olive oil if necessary.
  4. Add remaining chopped clove garlic and jalapeno peppers to the stir fry and stir.
  5. Lastly, pour the stir fry sauce over the chicken and vegetables, and make sure it covers everything as you pour it.
  6. Stir and let cook for just about 30 seconds until the sauce starts to thicken. Remove from heat and serve.
