Chicken Stir Fry
Description
The recipe starts by sautéing garlic and jalapeno slices briefly in olive oil to release their aromas. Sliced chicken breast is then added and cooked until browned and cooked through. Afterward, red bell pepper and onion strips are incorporated and cooked briefly under a lid to soften while maintaining some texture. Additional chopped garlic and jalapeno peppers are added before pouring the stir fry sauce over the mixture. The sauce, combining honey, fish sauce, orange marmalade, coconut sugar, and water, coats the ingredients as it thickens slightly for about 30 seconds off heat.
This preparation produces tender chicken with a glossy glaze and crisp-tender vegetables. The combination of sweet marmalade and honey balances the savory fish sauce and the heat from jalapeno provides a lively flavor contrast. Garlic adds depth and aromatic pungency. Sesame seeds can garnish for a subtle nutty accent.
Chicken Stir Fry can be served immediately as a main dish, typically alongside rice or noodles for a full meal. It showcases simple ingredients transformed by a homemade sauce that delivers a harmony of sweet, salty, and spicy flavors without being overpowering.
Ingredients
- 1 - 2 Tablespoon extra virgin olive oil
- 4 garlic chopped, divided, cloves
- 8 jalapeno pepper chopped, divided, slices
- salt to taste
- black pepper to taste
- 2 chicken breast sliced
- 1 yellow onion medium
- 1 red bell pepper sliced
- sesame seeds for garnish (optional)
Stir Fry Sauce
- 1 Tablespoon honey
- 1 Tablespoon fish sauce
- 1 Tablespoon orange marmalade
- ½ Tablespoon coconut sugar
- 1 Tablespoon water
Instructions
- Heat oil over medium-high heat. Add 3 chopped garlic cloves and 4 chopped jalapeno pepper slices to the skillet and saute for about 30 seconds.
- Add sliced chicken strips to skillet and saute for about 5-7 minutes or until cooked through while turning chicken to brown on both sides.
- After chicken is cooked, add sliced strips red bell pepper and onion. Stir well, cover with a lid and saute for about 3 minutes, stirring occasionally, making sure nothing sticks to the pan. Add a little bit of olive oil if necessary.
- Add remaining chopped clove garlic and jalapeno peppers to the stir fry and stir.
- Lastly, pour the stir fry sauce over the chicken and vegetables, and make sure it covers everything as you pour it.
- Stir and let cook for just about 30 seconds until the sauce starts to thicken. Remove from heat and serve.
