Description
The filling combines cream cheese, sour cream, shredded chicken, taco seasoning, shredded Mexican cheese, diced tomatoes with green chiles, minced garlic, sliced green onions, and chopped cilantro. This mixture is spread evenly over flour tortillas, which are then rolled tightly and chilled to firm up. After chilling, the logs are sliced into 1-inch pinwheels that reveal colorful fillings.
The pinwheels deliver a creamy, spicy, and slightly tangy flavor with a soft tortilla texture, offset by fresh herbs and the mild heat from the chiles. They can be served cold or at room temperature as snackable finger food.
For shredded chicken, recipes with good seasoning like Tequila Lime Chicken are recommended, or leftover cooked chicken and rotisserie chicken are suitable alternatives. Leftover filling freezes well up to two months, enabling make-ahead convenience.
Ingredients
- 12 oz cream cheese my packages are 8oz, so I used a package and a half, softened to room temperature
- 1/2 cup sour cream
- 2 cups chicken see recipe notes below, shredded
- 1.5 Tbsp taco seasoning (choose your favorite)
- 1 1/2 cups Mexican cheese shredded
- 10 oz diced tomatoes with green chiles canned, very well drained
- 1 1/2 tsp garlic finely minced
- 5 green onions sliced thinly
- 3/4 - 1 cup cilantro adjust to your tastes, chopped finely
- 8 flour tortillas burrito sized
- cilantro optional, fresh minced, for garnish
Instructions
- Combine all ingredients in a large mixing bowl, stirring until well combined.
- Lay flour tortilla down on work surface and spread about 1/4 cup (amount will vary from person to person) evenly over the tortilla, leaving a 1/2 - 1 inch border all around.
- Start at the bottom of the tortilla (closest to you), and roll up tightly towards the top, like a cigar. Place roll seam side down on prepared pan.
- Repeat with remaining tortillas and place in refrigerator for 30 minutes to several hours to chill and firm up.
- Use a sharp, serrated knife to slice roll into 1 inch pinwheels and serve.
Notes
- Shredded chicken can come from seasoned cooked chicken like Tequila Lime Chicken, leftover cooked chicken, rotisserie chicken, or canned chicken.
- Preparation time excludes chilling time which can vary widely.
- Leftover filling can be frozen in airtight containers for up to two months.
