Ingredients
- 8 oz lo mein or rice noodles
- 2 boneless skinless chicken breasts, sliced thin
- 2 tablespoons vegetable oil
- 2 cups stir-fry vegetables bell peppers, carrots, broccoli, snap peas
- 2 green onions sliced (for garnish)
- 1 tablespoon sesame seeds optional
Teriyaki Sauce:
- ¼ cup soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 2 teaspoons cornstarch mixed with 2 teaspoons water
- 1 teaspoon grated ginger
- 2 cloves garlic minced
Instructions
Step No.1: Cook the Noodles
- Cook the noodles according to package instructions, then drain and set aside.
Step No.2: Make the Teriyaki Sauce
- In a bowl, whisk together soy sauce, honey, sesame oil, rice vinegar, ginger, garlic, and cornstarch slurry. Set aside.
Step No.3: Cook the Chicken
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 4-5 minutes until browned and cooked through. Remove from the pan.
Step No.4: Stir-Fry the Vegetables
- In the same pan, add the remaining 1 tablespoon of oil. Stir-fry the vegetables for 3-4 minutes until slightly tender but still crisp.
Step No.5: Combine Everything
- Return the chicken to the pan, pour in the teriyaki sauce, and stir well. Add the cooked noodles and toss to coat everything in the sauce.
Step No.6: Serve & Garnish
- Top with sliced green onions and sesame seeds. Serve hot and enjoy!

- Best Noodles: Lo mein, udon, or rice noodles work well for this recipe.
