Ingredients

  • 4 oz linguini, dry
  • 1 Tbsp salted butter
  • 1/2 onion, diced
  • 3 garlic cloves, minced. or ¾ tsp garlic powder
  • 2 Tbsp unbleached all-purpose flour
  • 1 c milk
  • ½ c chicken or vegetable stock (we prefer low sodium)
  • ¼ c dry white wine
  • 1 oz Parmesan cheese, fresh grated
  • 1 Tbsp 1/3 fat cream cheese, room temperature
  • ½ tsp salt
  • 1/8 tsp ground black pepper
  • 2 c cooked chicken, shredded
  • 1 c frozen peas, thawed
  • 2 Tbsp bread crumbs

Instructions

  1. Preheat oven to 375F.
  2. Bring a large pot of water to a boil. Add pasta and cook 7-9 minutes, until just tender. Drain and set aside.
  3. While the pasta is cooking, heat butter in a large, non-stick sauté pan. Add the onions and garlic. Sauté over medium heat 4-5 minutes, until onions are softened.  
  4. Add the flour, and mix until all the flour is moistened.
  5. Add milk, stock, and white wine. Bring to a simmer and mix until the flour has been dissolved. Stir in parmesan cheese, cream cheese, salt, and pepper. Simmer 7-10 minutes, stirring often, until the sauce is thickened and the cream cheese has melted.
  6. Remove pan from heat. Stir in shredded chicken, peas, and cooked pasta.
  7. Turn mixture into a greased 8x8 baking dish.*
  8. Top with breadcrumbs and place in preheated oven. Bake for 20 minutes, until bread crumbs are golden.
  9. Serve warm with a green salad.

Notes

  • *Recipe can be made up to this point ahead of time and refrigerated until you are ready to bake. Top with breadcrumbs and bake covered with foil for 10 minutes, then uncovered for 20 min.
