  • 2 cloves garlic minced

  • 9 ounces tortellini 1 package
  • 6 cups chicken broth
  • cups chicken cooked shredded
  • parsley chopped, fresh

Instructions

  1. Heat olive oil in a large dutch oven over medium heat.
  2. Add onion, carrots, celery, and salt and pepper, cook for a few minutes until softened.
  3. Stir in garlic and Italian seasoning, cook for another minute.
  4. Add in tortellini and chicken broth.
  5. Bring the mixture to a boil, and cook pasta until it rises to the top.
  6. Reduce to a simmer and stir in chicken and parsley. Add more chicken broth if needed.
  7. Simmer soup for a couple of minutes, until chicken is heated through.
  8. Season with salt and pepper to taste.
