Chicken Waldorf Salad
Description
This Chicken Waldorf Salad features grilled and chopped chicken breast mixed with crunchy apple, celery, and red onion pieces, enhanced by toasted walnuts. The dressing uses mayonnaise, plain Greek yogurt, lemon juice, and Dijon mustard for creaminess and tang. The salad is tossed thoroughly to coat all ingredients evenly and garnished with fresh thyme if desired.
The flavors offer a balance between savory grilled chicken and the crisp sweetness of apple combined with nutty walnut texture. It can be served on its own, as a filling in sandwiches or wraps, or over greens for a filling meal.
Leftovers keep well refrigerated for up to five days, but freezing is not recommended as the texture changes. Optional add-ins like grapes can provide extra sweetness and variation.
Ingredients
- 2 cups chicken breast grilled, chopped
- 1 medium apple diced
- 2 talks celery diced
- ¼ cup red onion diced
- 2 Tablespoons walnuts toasted, if you'd like, chopped
- ¼ cup mayonnaise
- ¼ cup yogurt plain, Greek
- 1 Tablespoon lemon juice
- 1 ½ teaspoons Dijon mustard

Instructions
- Grill chicken: See notes in post above for how to grill the chicken if you haven't done so already. Let cool, chop chicken into chunks and measure out two cups.
- Mix together: Add chicken, diced apple, celery, onion and walnuts in a large bowl. In a small bowl whisk together the mayonnaise, yogurt, lemon juice and mustard until combined.
- Toss with dressing: Add dressing to the bowl with the chicken mixture and toss until everything is well combined. Top with fresh thyme, if using.
- Serve: Serve salad as is, in a wrap, sandwich or as a topping for salad.
- Store: Store leftovers in an airtight container for 3-5 days in the refrigerator. Unfortunately chicken salad doesn't freeze well so if you meal prep this salad plan to eat it within 3-5 days of making!
Notes
- Optionally add chopped grapes (about 1/4 cup) for added sweetness, reducing apple slightly if desired.
- Store leftovers in an airtight container for 3-5 days refrigerated; do not freeze as the texture will suffer.
