Description

The salad starts with chicken breasts gently poached in a seasoned broth with celery for subtle flavor infusion and moisture retention. After poaching, the chicken is cooled and diced into small cubes. The dressing blends mayonnaise and Greek yogurt for creaminess with seasoning to taste. The chicken is then combined with diced apples, halved grapes, and celery pieces, and allowed to chill to meld flavors.

Just before serving, toasted walnuts or pecans are folded in to provide texture contrast. The salad is presented over fresh baby greens including spinach and arugula, adding a peppery and leafy base that balances the fruit and creamy elements.

  • 7 oz chicken breast poached
  • 2 cups chicken broth low sodium
  • 1 apple peeled and cut into small cubes (I used Granny Smith, medium
  • 1 cup grape cut in half, red, seedless
  • 1/2 cup celery (chopped)
  • 1/4 cup mayonnaise light; Hellman's brand
  • 2 tbsp Greek yogurt I like Stonyfield, 0%
  • salt kosher salt
  • black pepper kosher salt
  • 2 tbsp pecans or walnuts
  • 6 cups spinach mixed baby greens
  • 6 cups arugula mixed baby greens

Instructions

  1. To poach chicken breast: Cover chicken breast in broth in a small pot, add water if it doesn't cover the chicken.
  2. Add salt and pepper, a piece of celery and it's leaves (you could add herbs like parsley, garlic, onion, or whatever you want) and bring to a boil.
  3. Reduce to a simmer and cook 5 minutes.
  4. Remove from heat, cover tight and let it sit for 15-20 minutes or until thickest part of the breast registers 160 degrees. Chicken will be cooked through.
  5. Drain, let it cool and cut into small cubes.
  6. Combine mayo, yogurt, salt, pepper and mix well.
  7. Add chicken, grapes, apples, celery, and let it chill in the refrigerator until you are ready to eat it.
  8. Mix in pecans right before serving.
  9. Serve over baby greens.
