Chicken Wild Rice Soup (Easy One Pot)

Chicken Wild Rice Soup combines sautéed carrots and onions with butter and flour to create a base, then simmers chicken, wild rice, and bay leaves in broth to develop a hearty, savory flavor. Milk is added towards the end for creaminess, resulting in a comforting soup with tender chicken and chewy grains.

Description

This recipe begins by sweating carrots and onions in butter until soft, then incorporates flour to build a roux that thickens the soup. Chicken, wild rice, water, Better Than Bullion broth concentrate, and bay leaves are added and simmered for about 30 minutes until the rice is tender and the chicken cooked through. The milk added at the end enriches the soup with a creamy texture without heaviness.

The combination of wild rice and chicken creates a filling meal with contrasting textures—the chewy grains complement the tender chicken pieces and soft vegetables. The bay leaves lend subtle aromatic notes, and the soup balances savory and mild flavors.

This one-pot preparation is practical for an easy weeknight dinner, served hot and enjoyed fresh. The soup thickens upon cooling but thins back out when reheated, preserving a pleasing consistency.

Ingredients

Servings
  • 1 cup carrot chopped
  • 1 cup onion diced
  • 4 tbsp butter unsalted
  • 1/2 cup all-purpose flour
  • 1 cup rice or Wild Rice, sprouted, blend
  • 1 cup quinoa or Wild Rice, sprouted, blend
  • 1 lb chicken boneless
  • 2 qt water
  • 2 tbsp Better than Bullion
  • 2 bay leaf
  • 1 tsp salt adjust to taste
  • 2 cup milk whole

Instructions

  1. Preheat a heavy bottom pot with butter. Add chopped carrots and diced onions and sauté until the onions turn translucent.
  2. Add flour to the pot, stirring until evenly incorporated.
  3. Add Better Than Bullion, water, wild rice, chicken and bay leaves to the pot. Bring it to a simmer and allow to cook for 30 minutes or until the rice is tender.
  4. Add milk to the mix and cook for 5 additional minutes. Remove from the heat and season to taste with salt.
  5. Serve soup while it's nice and hot. Whenever the soup cools down, it will naturally thicken up but will thin out once it's reheated.
