Ingredients

Servings
  • 4 boneless skinless chicken breasts
  • 8 oz egg noodles
  • 4 tablespoon butter unsalted
  • 2 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon thyme dried
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup Parmesan Cheese optional, grated
  • parsley fresh, for garnish

Instructions

  1. Cook the egg noodles according to the package instructions, then drain and set aside.
  2. While the noodles cook, heat olive oil in a large skillet over medium heat.
  3. Season the chicken breasts with salt, pepper, and dried thyme.
  4. Cook the chicken in the skillet for 6-7 minutes per side until fully cooked and golden brown.
  5. Remove the chicken from the skillet and set aside to rest.
  6. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  7. Add the cooked noodles to the skillet, tossing to coat them in the buttery garlic mixture.
  8. Slice the chicken breasts and serve over the buttered noodles.
  9. Garnish with freshly grated Parmesan cheese and chopped parsley before serving.

Notes

  • Feel free to use other types of pasta, like fettuccine or spaghetti, if you don’t have egg noodles.
  • You can add vegetables like steamed broccoli or sautéed mushrooms for extra flavor and nutrition.
  • If you prefer a creamy version, add a little heavy cream or cream cheese to the butter sauce.
  • Leftover chicken can be stored in the fridge for up to 3 days and reheated with the noodles.
  • For a lower-fat version, use olive oil instead of butter.
  • Adjust the seasoning to your taste, adding more salt or herbs if desired.
  • This dish pairs wonderfully with a simple side salad or garlic bread.
  • To make this dish gluten-free, swap out the noodles for a gluten-free pasta variety.
