Description

Chickpea Banana Muffins use canned garbanzo beans drained and rinsed, mashed together with ripe banana, eggs, coconut sugar, baking powder and soda, vinegar, vanilla extract, and salt to form a smooth batter. The inclusion of chickpeas adds protein and moisture, resulting in a tender, dense crumb while keeping the muffins gluten- and dairy-free. Chocolate chips can be stirred in for extra indulgence. After filling muffin cups three-quarters full, the muffins bake at 350°F for 30 to 35 minutes until golden around the edges and a toothpick tests clean. Cooling fully before removing the paper liners helps maintain muffin shape and texture. These muffins provide an alternative baked treat suitable for restricted diets, balancing wholesome ingredients with familiar flavors.

  • ½ cup banana 1 large ripe banana, mashed
  • 2 egg
  • 1 garbanzo beans 15-ounce can, drained and rinsed
  • cup coconut sugar or brown sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp vinegar or lemon juice
  • 1 tsp vanilla extract pure
  • ¼ tsp salt sea salt
  • 3/4 cup chocolate chips optional

Instructions

  1. Preheat the oven to 350 degrees F and line a muffin tray with 9 muffin papers (or spray with cooking oil).
  2. Drain the chickpeas into a colander and give them a shake to remove any excess liquid. 
  3. Transfer the beans to a blender (or food processor), along with the rest of the ingredients for the muffins except for the chocolate chips.
  4. Blend until a smooth batter forms. Stir in the chocolate chips.
  5. Fill the muffin papers up ¾ of the way with muffin batter and sprinkle with additional chocolate chips if desired.
  6. Bake for 30 to 35 minutes, or until the muffins are golden-brown around the edges and test clean.
  7. Allow muffins to cool completely before peeling off the muffin papers to eat.
