Chickpea Bites Meal Prep

Chickpea Bites Meal Prep offers seasoned, baked chickpea patties with a crispy breadcrumb coating and a soft, flavorful center, paired with a zesty avocado dip. This dish combines spices like cumin, cayenne, and garlic powder with lime and toasted sesame oil for a bright, savory mix suited for easy meal assembly and snack options.

Description

The recipe forms chickpea bites by processing chickpeas with half the breadcrumbs, flour, egg, lime juice, sesame oil, and spices to create a mixture that binds into balls and discs. These are coated with the remaining breadcrumbs before baking at a high temperature until golden and crisp on the outside. This method yields a satisfying texture contrast and delivers savory, mildly spicy flavors from the spices and citrus.

Accompanying the bites is an avocado dip flavored with lime zest and juice, garlic powder, onion powder, and seasoning, adding creaminess and a refreshing counterpoint. The combination provides a balanced meal component suitable for snack boxes, lunches, or light dinners, with additional vegetables and trail mix suggested as accompaniments.

The bites store well for several days refrigerated and can be frozen after baking, allowing for convenient meal prep. Thawing refrigerated overnight ensures freshness and ease of reheating before serving.

Ingredients

Servings

For the chickpea bites:

  • 15 ounces chickpeas drained and rinsed, canned
  • ¾ cup breadcrumbs divided
  • cup all-purpose flour
  • 1 egg large
  • 1 lime juiced
  • 2 teaspoons sesame oil toasted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • black pepper to taste
  • cooking spray

For the avocado dip

  • 1 avocado mashed
  • 1 lime zested and juiced
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • kosher salt to taste
  • black pepper to taste

For accompaniments

  • snap peas
  • carrot
  • trail mix

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. In the bowl of a food processor, combine chickpeas, ½ cup breadcrumbs, flour, egg, lime juice, sesame oil, garlic powder, onion powder, salt, cumin, cayenne pepper, and black pepper. The mixture should stick together like a ball.
  3. Add remaining ¼ cup of breadcrumbs to a shallow bowl. Roll two tablespoons of chickpea mixture into a ball and flatten into a ½-inch thick disc (I used cookie scoop). Toss in breadcrumbs and place on prepared baking sheet. Repeat with the remainder chickpea mixture. Spray chickpea bites with nonstick spray and bake until golden brown, 20-25 minutes, flipping halfway through.
  4. Meanwhile, make the avocado dip. In a medium bowl, combine avocado, lime zest and juice, garlic powder, and onion powder. Combine and season with salt and black pepper, to taste.

Notes

  • Chickpea bites keep well refrigerated for 4 to 5 days, supporting meal prep needs.
  • The avocado dip can be prepared 1 to 2 days in advance to save time on serving day.
  • For freezing, cool baked chickpea bites completely on a baking sheet before transferring to a storage container; thaw overnight in the fridge before use.
  • Frozen chickpea bites maintain quality for up to 3 months.
