Chickpea Cucumber Feta Salad

This Chickpea Cucumber Feta Salad combines chickpeas with fresh cucumber, red onion, dill, spearmint, and crumbled feta cheese, dressed with lemon juice, red wine vinegar, and olive oil. The mix of herbs adds brightness to the creamy feta and mild chickpeas, with refreshing cucumber providing crunch. The salad can be marinated for an hour to deepen the flavors, making it a light, tasty side or a simple, satisfying meal.

Description

The Chickpea Cucumber Feta Salad is a fresh and vibrant combination of boiled or canned chickpeas with diced cucumber and finely chopped red onion. Minced dill and spearmint impart herbaceous notes that enhance the salad's freshness. A mix of extra virgin olive oil, fresh lemon juice and zest, and red wine vinegar dresses the salad, providing acidity and richness that complements the creamy crumbled feta cheese.

Texture contrasts come from the tender yet firm chickpeas and crisp cucumbers, balanced by the crumbly feta. The lemon and vinegar brighten the overall flavors, while the herbs add an aromatic lift. Mixing all ingredients gently ensures even distribution of flavors.

Serving the salad after marinating for about an hour in the fridge allows the flavors to meld and intensify. It's suitable as a light lunch, a side dish alongside grilled proteins, or a refreshing complement to hearty meals on warm days.
