Chickpea Fritters
Description
Chickpea Fritters are made by mashing rinsed canned chickpeas with all-purpose flour, grated Parmesan, parsley, cumin, garlic powder, and seasonings, then adding water to bind the mixture. Formed into small, thin patties, they cook quickly in hot canola oil until a golden-brown crust forms on both sides, ensuring the interior is cooked through.
The fritters develop a crisp exterior with a soft, flavorful center where the chickpeas, cheese, and spices meld together. Accompanying them with tahini sauce introduces a creamy, slightly nutty component that pairs well with the earthy spices in the fritters.
These fritters can be stored refrigerated for up to five days and are suitable for reheating in several ways including microwave, skillet, or air fryer. They also freeze well both before and after cooking, allowing for convenient meal prep.
Ingredients
- 1 ounce chickpeas rinsed, drained, canned
- ¼ cup all-purpose flour
- ¼ cup Parmesan Cheese grated
- 1 tablespoon parsley chopped
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons water
- 2 tablespoons canola oil
- tahini for serving, sauce
Instructions
- In a medium bowl, combine the chickpeas, all purpose flour, parmesan cheese, fresh herbs, cumin, garlic powder, salt and pepper. Add two tablespoons of water and use a fork or masher to combine the ingredients until they are well blended.
- Divide the mixture into 6 equal parts and form into thin patties.
- In a large pan, heat the oil until it's shimmering. Then add the chickpea fritters and cook until browned and fully cooked through, about 2-4 minutes per side.
- Place on a plate lined with a paper towel to absorb any excess oil, then serve with tahini sauce or any other sauce of choice.
Notes
- Store leftover fritters in an airtight container in the refrigerator for up to 5 days and reheat by microwave, skillet, or air fryer.
- Freeze uncooked fritters by placing them on a baking sheet until solid, then transfer to airtight bags; thaw before cooking as directed.
- Cooked fritters can also be frozen; thaw in refrigerator and reheat in an oven at 350°F until heated through.
