For The Dressing:

  • cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon garlic minced, or 1 large garlic cloves, minced
  • 2 teaspoons oregano plus extra to serve, dried
  • ¼ teaspoon salt

For The Salad:

  • 1 cucumber halved lengthways and sliced, large
  • 10 ounces grape tomatoes or cherry tomatoes, halved
  • 1 green pepper deseeded and sliced
  • ½ red onion sliced thinly
  • 14 ounce chickpeas canned, washed and drained
  • 10 ounces kalamata olives pitted
  • 3.5 oz feta cheese good quality creamy

Instructions

  1. Whisk together dressing ingredients in a jug or jar.
  2. Mix together all of the salad ingredients in a large bowl. Toss with half of the dressing. Season with extra salt ONLY IF NEEDED (depends how salty your feta cheese is). 
  3. Top with brick of feta cheese and drizzle over remaining dressing . 
  4. Serve with chicken, fish, lamb, beef, the options are endless!

Notes

  • Adjust salt in the dressing after tasting, as feta cheese contributes saltiness to the salad.
  • This salad pairs well with grilled chicken or fish for a complete meal.
  • Use good-quality creamy feta for best texture and flavor.
