Chilate is one of El Salvador's most traditional drinks, made from nixtamalized maize flour, ginger and allspice.

Ingredients
- 1⅓ cup nixtamalised maize flour (Maseca)
- 1 (2-inch / 5 cm) piece ginger, grated
- 10 whole berries allspice
- 8 cups water
Instructions
- In a large non-stick saucepan, dissolve the maize flour in the 8 cups (2 liters) of water.
- Place the pan on a low heat. Add the ginger, allspice and mix.
- Bring to a boil and simmer for 25 minutes, stirring regularly and making sure that it does not stick to the bottom of the pan.
- Serve the drink with dulce de banana, nuegados de huevo, nuegados de yuca or nuegados de masa all topped with panela honey.
