Chile Pasilla Oaxaqueño Salsa

Chile Pasilla Oaxaqueño Salsa blends roasted pasilla chiles with tomatillos, garlic, and salt to create a thick, smoky, and mildly spicy sauce. Roasting the tomatillos and chiles develops a tender texture and smoky flavor characteristic of this traditional ingredient. The salsa's bold yet balanced heat complements dishes needing a smoky kick, while the freshness of the tomatillos brings brightness. It yields about 1.5 cups of salsa, ready to use as a condiment or cooking base.

Description

This salsa features pasilla chiles from Oaxaca, Mexico, known for their distinct smoky character and mild heat. Roasting the tomatillos softens them and concentrates their tang, while roasting the chiles enhances their smoky aroma. Soaking the roasted chiles in hot water softens them further before blending with garlic and salt. The tomatillos are pulsed into the blended chile mixture to retain a thick, textured consistency rather than a fully smooth sauce.

The salsa can be used as a dip, a topping for meats, or incorporated into other dishes for a smoky, mildly spicy flavor. The process of roasting and soaking highlights the key qualities of pasilla Oaxaqueños, which are less commonly available in some regions, and may be substituted with regular pasilla chiles with some flavor differences.
