For the Fries:

  • 2 sweet potato sliced lengthwise in both directions to form fries, medium
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • salt to taste
  • black pepper to taste

For the Mayo:

  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • salt to taste
  • black pepper to taste

Instructions

  1. Prepare a baking sheet by lining with parchment paper, and preheat oven to 425 degrees F.
  2. Mix all ingredients for fries in a bowl; stir, using a spoon or your hands, to coat the sweet potatoes evenly.
  3. Spread evenly on baking sheet so the fries do not touch; bake for 35-40 minutes (or until browned and crispy), turning once or twice.
  4. Meanwhile, mix all ingredients for lemon garlic mayo in a small bowl, and refrigerate until needed.
  5. Serve sweet potato fries with the lemon garlic mayo.

Notes

  • For a healthier, lighter version of this dip, substitute Greek yogurt for the mayo. For a vegan version, use vegan mayonnaise.
