Chilled Cucumber Tomato Salad is a refreshing salad made with fresh ingredients that everyone can enjoy all year round. It's fast, easy, and can be made ahead which makes it perfect for potlucks!

For the dressing:

  • 1/4 cup olive oil
  • 2 Tablespoons red wine vinegar
  • 1 Tablespoon sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper ground
  • 1/2 teaspoon chili flakes
  • 1/2 cup basil chopped and loosely packed
  • 1/4 cup parsley chopped and loosely packed

For the salad:

  • 4 cups tomatoes halved, cherry or grape
  • 2 cucumber sliced
  • 1 large red onion sliced
  • feta cheese

Instructions

  1. Whisk together all the ingredients for salad dressing. Salad dressings should be on the saltier side so that when they are added to the veggies, the flavors balance themselves.
  2. Add all the veggies to a large bowl, and toss well with the salad dressing. Refrigerate for at least an hour before serving. Mix again right before serving.
