Description
This Chimichurri Salad brings together cooked and cooled orzo pasta as a soft, chewy base with juicy grape tomatoes and fresh arugula leaves for a peppery bite. Ingredients
- 4 cups orzo pasta cooked and cooled
- 1 pint grape tomatoes sweet, halved
- 8 oz Ciliegine Mozzarella fresh, the little balls, halved
- 5 oz arugula package
- 1/2 cup cilantro as chimichurri sauce ingredient
- olive oil drizzle of
- salt to taste
- black pepper to taste
Instructions
- In a large bowl, add the cooked orzo, the tomatoes, the mozzarella, the arugula and the chimichurri and toss to combine
- Drizzle with olive oil, and season with salt and pepper to taste
