Chimichurri Salmon with Mango

Chimichurri Salmon with Mango features grilled salmon fillets topped with a fresh chimichurri sauce made from mango, cilantro, parsley, red pepper flakes, lime juice, and vegetable oil. The combined flavors create a bright, slightly spicy, and fruity complement to the tender, grilled salmon.

Description

This recipe prepares a chimichurri sauce by mixing diced mango with freshly chopped cilantro and Italian parsley, seasoned with red pepper flakes, lime juice, and vegetable oil. Salt and black pepper are adjusted to taste, creating a vibrant sauce balancing fruitiness, herbaceous notes, and heat.

Salmon fillets are lightly oiled, seasoned, and grilled over medium-high heat until opaque and cooked through, typically 4-6 minutes per side depending on thickness. Grilling provides a slight char and smoky flavor while keeping the fish moist and tender.

The chimichurri is spooned over the cooked salmon before serving, adding fresh, zesty brightness and a contrasting texture with the mango and herbs. This dish can be served as a flavorful main course, suitable for summer meals or light dinners.
