Chimichurri Sauce

Chimichurri Sauce is a fresh, herbaceous condiment made from finely chopped parsley, oregano, garlic, and red chili, mixed with olive oil and red wine vinegar. This sauce offers vibrant, tangy, and slightly spicy flavors to complement grilled meats and vegetables.

Description

This chimichurri recipe begins with finely chopping fresh flat-leaf parsley, oregano leaves, garlic cloves, and a small amount of red chili pepper or dried red pepper flakes. The chopped herbs and spice create a lively base with a robust herbal aroma and moderate heat. These are combined with extra virgin olive oil, red wine vinegar, kosher salt, and freshly ground black pepper to create a balanced sauce with acidity, saltiness, and richness from the oil.

The method emphasizes hand chopping to maintain texture, though a food processor may be used, resulting in a more uniform consistency. The sauce is served immediately or refrigerated and used as a flavorful accompaniment to grilled proteins, roasted vegetables, or as a marinade. Its freshness and bright flavors cut through rich or fatty dishes.

Each serving size is about three tablespoons, allowing for generous use without overwhelming other flavors. The simplicity of ingredients and preparation highlights the natural qualities of fresh herbs combined with a sharp, vinegar tang and smooth olive oil mouthfeel.

Ingredients

Servings
  • ½ cup parsley flat leaf, finely chopped, leaves
  • 1 tablespoon oregano fresh finely chopped leaves or 1 teaspoon dried
  • 1 tablespoon red chili pepper finely chopped from one small chili or ½ teaspoon dried red pepper flakes
  • 3 to 4 garlic finely chopped, cloves
  • ½ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper freshly ground

Instructions

  1. Chop the dry ingredients. Finely chop the parsley, oregano, chili pepper, and garlic. Alternatively, you can pulse the ingredients in a food processor (but see my note above on why I think hand chopping is best!). Then place the chopped ingredients in a small bowl.
  2. Stir everything together. Add the olive oil, vinegar, salt, and pepper. Stir together and serve immediately or store in the fridge (see storage instructions above).

Notes

  • Chimichurri sauce servings measure about 3 tablespoons each, which works well as a condiment or marinade portion.
