Chimichurri Sauce

Chimichurri Sauce is a vibrant, herbaceous condiment made from finely chopped fresh parsley, oregano, onion, and garlic, blended with olive oil, red wine vinegar, and seasoned with red pepper flakes, salt, and black pepper. Chilling the sauce develops its flavors, making it ideal for serving over grilled meats.

Description

This Chimichurri Sauce recipe uses fresh parsley and oregano as the primary herbs, providing a bright and slightly pungent base. Minced onion and garlic contribute sharpness and depth, while red wine vinegar adds acidity that balances the oil’s richness. Red pepper flakes lend gentle heat, adjustable to taste. The quick pulse in a food processor ensures a coarse, textured sauce rather than a smooth puree, preserving the fresh ingredients' integrity.

Typically chilled for at least an hour, the sauce’s flavors meld and intensify. It’s commonly served with grilled meats, where it cuts through rich, smoky flavors and enhances the overall dish. Because the oil naturally separates, shaking before use is recommended.

Storage in a sealed container in the refrigerator keeps it fresh for 2 to 3 days. This straightforward preparation highlights the fresh herbs and bright seasonings without overpowering complexity, making chimichurri a versatile tabletop sauce.
