Chimichurri Sauce
Description
This Chimichurri Sauce combines equal parts fresh cilantro and parsley stems and leaves with olive oil and lemon juice to create a flavorful, loose sauce. Red onion and garlic add pungency, while red wine vinegar and dried oregano provide acidity and herbal notes. Red pepper flakes and black pepper introduce a gentle heat.
Blending these ingredients briefly in a food processor yields a coarse, green sauce that can be served immediately or stored in the fridge. The olive oil’s texture will solidify when chilled, so bringing the sauce back to room temperature or gently warming will restore its pourable consistency.
Chimichurri lends bright freshness and zesty herbal complexity, making it an excellent topping for grilled steak or chicken, roasted vegetables, or as a marinade base. Its sharpness and fresh flavor also nicely contrast richer dishes.
The sauce will keep for about a week in a sealed container in the refrigerator. Before serving chilled sauce, warming it slightly helps melt any solidified olive oil for a smooth pour.
Ingredients
- 1 cup cilantro stems and leaves, fresh
- 1 cup parsley stems and leaves, fresh
- 3/4 cup olive oil
- 1/4 cup lemon juice (about 1 1/2 lemon)
- 3 tablespoons red onion chopped
- 5 cloves garlic
- 2 1/2 tablespoons red wine vinegar
- 2 teaspoons oregano dried
- 2 teaspoons kosher salt
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon black pepper freshly ground
Instructions
- Add cilantro, parsley, olive oil, lemon juice, red onions, garlic, red wine vinegar, dried oregano, red pepper flakes, salt and black pepper to a food processor or blender.
- Pulse in short 1-second increments about 3-5 times. Serve immediately or store in an airtight container in the fridge.
Notes
- Makes about 1 1/2 cups of sauce, enough for several servings.
- Store in an airtight glass container in the fridge for up to one week.
- Olive oil solidifies when cold; warm the sauce to liquid before serving by leaving it at room temperature or running the jar under warm water.
