Ingredients
- 1 pound Shrimp peeled and deveined
- 1 tablespoon vegetable oil
- 1 teaspoon smoked paprika
- salt to taste
- black pepper to taste
- ¾ cup chimichurri
- lemon for serving
Instructions
- Toss the shrimp with vegetable oil, paprika, and salt and pepper to taste until well coated.
- Heat a large pan to medium-high heat and sear the shrimp 2-3 minutes per side, until cooked through.
- Toss with chimichurri. Squeeze lemon over the top and serve.
Notes
- I LOVE this tossed with pasta, but it’s great with steamed or fried rice, or as an appetizer.
- Serves 4 as a main (4 ounces portions) with rice or noodles, 8 as an appetizer (2 ounce portions).
- Use my Homemade Chimichurri Recipe, or use your favorite store bought.
