Chimichurri Tomato Salad
Description
The Chimichurri Tomato Salad blends halved ripe cherry or grape tomatoes with a smooth chimichurri sauce formed by processing fresh parsley, garlic, olive oil, red wine vinegar, dried oregano, ground cumin, salt, and crushed red pepper until smooth. The sauce balances herbal brightness, acidity, and a hint of heat.
The tomatoes provide juicy bursts that contrast with the oily and tangy sauce clinging to their surfaces. The chill in the refrigerator allows flavors to meld, intensifying the complexity without compromising tomato texture. The cumin and oregano add earthy depth uncommon in simple tomato salads.
This salad suits summer meals or any time tomatoes are abundant, pairing well with grilled meats, sandwiches, or as an appetizer. It can be made ahead and stored for up to six days, keeping its fresh taste and texture.
