  • 1 cup parsley packed
  • 2 cloves garlic (peeled)
  • 6 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon oregano dried
  • 1 1/2 teaspoons cumin ground
  • 3/4 teaspoon salt
  • 1/2 teaspoon crushed red pepper

Instructions

  1. Slice the tomatoes in half and place in a large bowl.
  2. Add all remaining ingredients to a food processor. Puree until smooth.
  3. Pour the chimichurri sauce over the tomatoes and toss to coat. Cover and refrigerate until ready to serve.
