Chimichurri Wings
Description
This recipe seasons three pounds of chicken wings with coarse salt, black pepper, and olive oil to maximize crispiness and flavor absorption. The wings are cooked over direct heat on a grill preheated to 350°F/200°C or baked in an oven set at 450°F/230°C. Cooking times range from 10-15 minutes per side on the grill, while baking involves positioning in the oven's center rack for even heat and crisping.
The chimichurri sauce, served alongside or tossed with the wings, primarily features fresh cilantro for a bright, herbaceous note, balancing the savory, crispy chicken. The sauce can be used as a drizzle or dipping condiment to enhance the wings' flavor complexity.
This dish makes a flavorful main or appetizer with a balance of crisp texture from the wings and freshness from the chimichurri. It suits gatherings or meals where grilled or baked crispy wings with a herbal accompaniment are desired.
Ingredients
- 3 lbs chicken wings (or drumettes), tips removed
- 1 tbsp salt for grilling, coarse
- black pepper to taste
- 1 tbsp olive oil
- ½ cup cilantro for serving, as chimichurri sauce ingredient
Instructions
Grilling Instructions
- Preheat grill to 350°F/200°C.
- While the grill is preheating, season the wings with the coarse salt, black pepper and the olive oil, and toss them all together in a bowl.
- If you don't have chimichurri sauce leftover in the fridge, make the chimichurri sauce while the grill preheats.
- Arrange the wings on the grill and grill for approximately 10-15 mins on each side until they are crispy.
- When the wings are crispy, remove them from the grill.
- Serve them with cilantro chimichurri drizzled on top, as a dipping sauce, or toss the wings directly in the chimichurri for maximum flavor.
Baking Instructions
- Position the oven rack in the center of the oven, then preheat the oven to 450°F/230°C.
- While the oven is preheating, season the wings with the coarse salt, black pepper and the olive oil to help them crisp up, and toss them all together in a bowl.
- Line a large baking sheet with aluminum foil, or parchment paper, then place a cooling rack on top. Arrange the wings on the cooling rack, leaving some space in between them so air circulates and they get crispy.
- Bake the wings for 25-30 minutes, flipping them halfway.
- If you don't have chimichurri sauce leftover in the fridge, make the Cilantro Chimichurri sauce while the wings bake.
- When the wings are crispy, remove them from the oven.
- Serve them with cilantro chimichurri drizzled on top, as a dipping sauce, or toss the wings directly in the chimichurri for maximum flavor.
Air Fryer Instructions
- Preheat the air fryer to 400°F/200°C.
- While the air fryer is preheating, season the wings with the coarse salt, black pepper and the olive oil to help them crisp up, and toss them all together in a bowl.
- Arrange the wings on the air fryer basket, leaving some space in between them so air circulates and they get crispy. Depending on the size of your air fryer, you may need to do this in batches.
- Air fry them 15-20 minutes, giving them a shake halfway.
- If you don't have chimichurri sauce leftover in the fridge, make the Cilantro Chimichurri sauce while the wings bake.
- When the wings are crispy, remove them from the air fryer.
- Serve them with cilantro chimichurri drizzled on top, as a dipping sauce, or toss the wings directly in the chimichurri for maximum flavor.
