Chinese Chicken Salad
Description
The Chinese Chicken Salad uses cooked chicken breast combined with shredded cabbage to provide bulk and crisp texture. Mandarin oranges add bright sweetness that contrasts with the sesame seeds and toasted almonds, introducing nuttiness. Thinly sliced green onion adds a fresh onion bite.
The dressing blends rice wine vinegar for acidity, grated fresh ginger for warmth, sesame oil for depth, and avocado oil to mellow and bind with some sugar to balance acidity and salt and pepper for seasoning. Heating the dressing ingredients slightly dissolves the sugar and intensifies flavors before cooling them for fresh salad assembly.
This salad is tossed just before serving, keeping the cabbage crisp. It is a satisfying main or side salad that blends fresh, sweet, and nutty flavors with tender chicken. It works well for light meals or potlucks.
Ingredients
- 1/3 cup rice wine vinegar
- 2 Tablespoons Swerve (regular sugar may be substituted)
- 2 Tablespoons sesame oil
- 2 teaspoons ginger fresh grated
- 1 1/2 teaspoons kosher salt
- 1/4 teaspoon black pepper
- 1/3 cup avocado oil or light olive oil
- 4 cups chicken breast either shredded, diced or chopped, cooked
- 1 green onion slice thin on the diagonal, bunch
- 2 11 ounce mandarin oranges drained (or fresh oranges, canned
- 1/4 cup sesame seeds toasted
- 1 cup almond toasted, sliced or slivered
- 1 head cabbage shredded. About 8-10 cups. (you may use pre-packaged cabbage as well. 2 10 ounce packages.)
Instructions
- Combine the first 7 ingredients, rice wine vinegar to vegetable oil, in a small sauce pan and heat over a low heat just until sugar is dissolved. Let cool and refrigerate.
- For the salad, combine all ingredients in a large bowl and toss with dressing.
