Chinese Crispy Noodles

Chinese Crispy Noodles are golden, crunchy fried noodles made from egg noodles or strips of egg roll or wonton wrappers. Description

These Chinese Crispy Noodles use either fresh egg noodles or sliced egg roll or wonton wrappers cut into strips. The noodles are deep-fried in hot oil heated to 375-400°F in a wok or deep pot. While frying, chopsticks are used to quickly break the noodles apart to prevent them from sticking. The frying lasts just 20 to 30 seconds per side until the noodles become golden brown and crisp. They are drained on paper towels and sprinkled with salt while hot to season them. The result is a light, airy crunch that contrasts well with soft dishes or served as a snack or garnish.

These crispy noodles are versatile as a topping for soups, salads, or stir-fry and offer a textural contrast. They should be eaten fresh or stored briefly as the crispness decreases over time.

  • 4 ounces egg noodles can substitute 5 egg roll wrappers or 20 egg wonton skins, cut into 1x4 inch strips, fresh, uncooked
  • 2 cups vegetable oil (or canola oil or any other frying oil of your choice)
  • salt (to taste)

Instructions

  1. If using fresh egg noodles, there is no need to do anything to prep them, as they will be easy to snap into snackable pieces after frying. If using egg roll or wonton wrappers, cut them into 1x4 inch (2.5x10 cm) strips.
  2. In a wok or deep medium pot where the oil will only come up about half the height of the pot, heat the oil to 375-400°F (190-204°C). Use a deep fry thermometer/candy thermometer to maintain temperature.
  3. Take a small handful of the noodles, and carefully drop them into the oil. As soon as they hit the oil, use a pair of wooden or bamboo chopsticks to break them up and prevent them from sticking together as they fry and expand.
  4. Fry for 20-30 seconds. Using your chopsticks or a slotted spoon, carefully flip the noodles and fry for another 20 seconds, or until evenly golden brown.
  5. Drain the fried noodles of excess oil, and transfer them to a plate or sheet pan lined with paper towels to cool. Sprinkle salt over the noodles to taste. Repeat until you’ve fried all of your noodles.
