Chinese Cucumber Salad

Chinese Cucumber Salad features crushed cucumber pieces tossed with garlic, salt, and optional seasonings like sugar, soy sauce, black vinegar, and chili oil. This salad is known for its crisp, refreshing texture combined with a pungent kick from garlic and a balance of savory, tangy, and spicy notes, making it a flavorful cold side dish.

Description

This salad uses fresh English cucumbers, peeled or trimmed according to size and tenderness, smashed to release juices and then cut into bite-sized pieces. Mashed garlic is mixed with the cucumbers along with salt and optional sugar to enhance flavor. Additional optional ingredients such as light soy sauce, black vinegar, and chili oil can be added to deepen the savory, acidic, and spicy profile depending on preference.

The result is a crunchy, bright salad with a mix of pungency from fresh garlic and a blend of savory and tart flavor from the soy and vinegar. The chili oil adds gentle heat without overwhelming. This salad is served chilled and is popular in Chinese cuisine as a refreshing accompaniment to richer dishes.

Ingredients

Servings
  • 1 cucumber or two smaller ones, around 350g, English variety, fresh
  • 3 garlic mashed and then chopped, cloves
  • 1/4 tsp. sugar , optional
  • salt to taste
  • 1 tbsp. sesame oil
  • 1 tbsp. soy sauce optional, light
  • 1 tsp. black vinegar , optional
  • 1 ~2 tsp. Chili oil optional, to taste

Instructions

  1. For long English cucumber, wash the cucumber and peel off tough skins. For small cucumber, remove the two ends.
  2. Smash with a wide kitchen knife (like Chinese slicing knife) until the cucumber is well crushed. Then cut into one bite pieces.
  3. Transfer all cucumber cubes into a bowl. Mix well with mashed garlic, salt and sugar.
  4. Or further add light soy sauce and vinegar to make a more strong version.
  5. Or add chili oil for a hot version.

Notes

  • For younger, tender cucumbers, retaining most of the skin adds texture and color to the salad.
