Description

This recipe uses pureed chipotle peppers in adobo sauce to infuse smoked chili flavor and moderate heat into a mayonnaise base. Lime juice brightens the sauce, while optional chopped cilantro and seasonings balance the flavors. The sauce is thick but spreadable, typical of aioli, and the chipotle paste is added incrementally to adjust spiciness.

The straightforward food processor method ensures the sauce is evenly combined without becoming smooth like a puree; some texture remains from the peppers. The aioli needs to be refrigerated for at least 30 minutes to develop flavors fully and can be stored for up to a week.

  • 3-6 chipotle chiles in adobo sauce
  • 2 teaspoons lime juice
  • 1 cup mayonnaise
  • 1 tablespoons cilantro , chopped and optional
  • 1/4 teaspoon salt fine sea salt
  • 1/4 teaspoon black pepper ground

Instructions

  1. In a small food processor (or blender), puree the chipotle peppers and adobo sauce for 30 seconds. It should be thick and paste like, it will not be smooth. Transfer to a seperate bowl. 
  2. Without cleaning the food processor,  add the lime juice, mayonnaise, cilantro (optional) fine sea salt and ground black pepper. 
  3. Add 1 tablespoon of the chipotle peppers at a time until the desired taste is achieved. I use the whole can, however I like things spicy. You are much better off adding in small amounts and taste testing along the way.
  4. Refrigerate the sauce for a minimum of 30 minutes or until served. You can refrigerate for up to a week in an airtight container.
