  • 2 portion chipotle black bean stew
  • 200 g salsa
  • 75 g cheese your choice; one that melts well)
  • 25 g cheese your choice; one that melts well)
  • jalapeños to suit your level of spiciness
  • 1 avocado mashed
  • 100 g crème fraîche

Instructions

  1. Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
  2. Lay 200 g Tortilla Chips on the baking tray and top with 200 g Salsa and then 75 g Cheese.
  3. Spoon 2 portion Chipotle Black Bean Stew over the tortillas and 25 g Cheese.
  4. Put into the oven for 10 minutes, until the cheese has melted.
  5. Top with 1 Avocado (mashed), 100 g Creme fraiche and Jalapeños.

Notes

  • Use thick tortilla chips to prevent breakage under the heavy toppings.
