Description
Chipotle Chicken Lettuce Wraps use chicken thighs marinated in a blend of chipotle peppers in adobo, olive oil, water, garlic powder, cumin, oregano, and black pepper. After marinating, the chicken is grilled to a medium-high temperature, resulting in juicy meat with a smoky, spicy profile. The lettuce cups are prepared from butter lettuce, chosen for its ability to hold fillings and mild flavor. The topping is a vibrant mix of mango strips, thinly sliced red onion and bell pepper, avocado slices, fresh mint, cilantro, and lime juice, which adds brightness and contrasts with the chicken's smoky heat.
The wraps can be assembled quickly and offer a hand-held meal with a mix of savory, sweet, and citrus notes. They are suited for casual lunches or light dinners. The combination of fresh herbs and lime juice in the topping balances the deep flavors of the marinated chicken.
Boston Bibb, green leaf, or romaine lettuce can also be used as alternatives for the wraps based on personal preference.
Ingredients
For the Chicken + Marinade
- 2 tablespoons olive oil
- 2 tablespoons water
- 3-4 chipotle peppers in adobo
- 1 teaspoon garlic powder
- 1 teaspoon cumin ground
- ½ teaspoon oregano dried
- ½ teaspoon black pepper
- 10 chicken thigh boneless skinless, cut in half
For the Lettuce Wraps:
- 1 butter lettuce head
- 2 Mango cut into thin strips
- ½ red onion thinly sliced
- ½ bell pepper thinly sliced, orange
- 2 avocado thinly sliced
- mint fresh
- cilantro fresh
- 1-2 lime juiced
- salt Kosher salt and freshly cracked, to taste
- black pepper Kosher salt and freshly cracked, to taste
Instructions
- Put the ingredients for the marinade in a food processor or blender and blend until smooth. Coat the chicken thighs in the marinade and refrigerate for 1-4 hours.
- After marinating, Heat an indoor or outdoor grill to about 400 degrees F (medium high heat). Place the chicken onto the grill and grill 5 to 6 minutes per side, until the chicken is cooked. Remove the chicken from the grill and let rest for 10 minutes.
- Meanwhile - clean the butter lettuce and separate it into cups.
- Combine the mango, red onion, bell pepper, avocado, mint, cilantro and lime juice in a bowl and toss to combine. Season with salt and pepper.
- Assemble the lettuce cups with a piece of chicken, a few tablespoons of the topping and serve with extra limes if needed.
Notes
- Butter lettuce is ideal for wraps due to its shape and texture, but Boston Bibb, green leaf, or romaine lettuce can also be used.
