Chipotle Chicken Recipe
Description
The Chipotle Chicken Recipe highlights the combination of chipotle peppers and honey which balances heat with sweetness, while lime juice adds acidity to brighten the marinade. The chicken breast or skinless boneless thighs are pounded to around 3/4 inch thickness ensuring they cook evenly without drying out. The marinade also includes smoked paprika and cumin for additional smoky and earthy notes. Marinating for four hours or overnight allows the chicken to fully absorb these flavors.
Cooking is done over medium heat, either on a grill or in a cast iron skillet, to achieve a good sear without overcooking the exterior. The instructions caution discarding the marinade after use to prevent contamination. The chicken is served with lime wedges, which can be squeezed on top for extra brightness. This recipe is suited for dinner or casual gatherings and can be paired with rice, salads, or grilled vegetables.
For best results, ensure all chicken pieces have similar thickness. Medium heat grilling helps cook the chicken evenly. Marinating time can vary from 30 minutes to overnight depending on how intense the flavor infusion is desired.
Ingredients
- 1 ½ tbsp canola oil
- 1 chipotle pepper from a can of chipotle peppers packed in adobo sauce, finely chopped
- 1 tbsp adobo sauce from the can
- 1 tbsp honey runny
- 2 tsp lime juice approx 1/2 lime
- 1 tsp garlic minced
- 1 tsp salt
- ½ tsp smoked paprika
- ¼ tsp cumin
- 1 lb chicken breast pounded to 3/4 inch thickness, or skinless boneless thighs
- lime for serving, wedges
Instructions
- Combine the oil, chipotle and sauce, honey, lime juice, garlic, salt, paprika and cumin in a large bowl. Add the chicken pieces and stir until coated. Marinate for at least 4 hours, or overnight.
- To cook the chicken, shake off most of the marinade and either grill or cook in a cast iron skillet with a splash of oil or cooking spray for 15 minutes, or until just cooked through.
Notes
- Pound chicken pieces uniformly to 3/4 inch thickness to ensure even cooking and juicy interior.
- Marinate chicken for 4 hours to allow flavors to fully develop; marinade time can range from 30 minutes to overnight.
- Grill chicken over medium heat to avoid charring the outside before the inside cooks through.
- Discard any leftover marinade used on raw chicken to prevent foodborne illness.
