Description
Chipotle Chicken Sliders feature shredded cooked chicken tossed with a creamy sauce made from mayonnaise, Greek yogurt, chipotle chiles in adobo, cilantro, and lime juice. This sauce provides a smoky, tangy flavor balanced by the cooling creaminess of mayo and yogurt. The mixture is spread over the bottom halves of slider rolls, layered with Pepper Jack cheese, then topped with the remaining rolls.
Brushed with melted butter and sprinkled with sesame seeds, the assembled sliders are baked covered and then uncovered to achieve a golden top and melted cheese inside. The result is a warm, flavorful slider with a tender, juicy filling accented by spicy chipotle and herbal notes from cilantro.
These sliders are suitable for casual meals and gatherings, offering an easy-to-eat option with a balance of smoky heat and creamy texture.
Depending on the size of rolls, more can sometimes fit into the baking dish to adjust portion size.
Ingredients
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1/4 cup chipotle chiles in adobo sauce
- 1 tablespoon cilantro coarsely chopped
- lime juice from 1
- 2 1/2 cups chicken breast shredded, cooked or rotisserie chicken
- 9 to 12 slider roll sliced in half
- 6 to 9 lices pepper jack cheese
- 2 tablespoons butter melted
- sesame seeds for topping
Instructions
- Preheat the oven to 325 degrees F.
- In the bowl of a food processor, add the mayonnaise, Greek yogurt, chipotle chiles in adobo sauce, cilantro and lime juice. Pulse until well combined, scraping down the sides of the bowl as needed.
- In a large bowl, add the shredded chicken. Pour the chipotle mayonnaise sauce over the chicken and mix until combined.
- In a 9x9 baking dish, layer the bottom half of the rolls in the bottom of the dish. Spread the chicken over the bottom half of the rolls and then layer with Pepper Jack cheese. Top with remaining half of the rolls.
- Pour the butter over the top of the sandwiches or spread with a pastry brush. Sprinkle with sesame seeds. Cover the sandwiches with tin foil and bake in the oven for 20 minutes. Remove the foil and bake an additional 5 minutes. Remove from the oven and serve immediately.
Notes
- The number of slider rolls used can vary depending on their size; up to 12 rolls might fit in a 9x9-inch baking dish.
