  • 1.5 cups olive oil or any neutral oil
  • 1/2 cup red wine vinegar
  • 1/4 cup honey
  • 3-4 chipotles in adobo
  • 1 tablespoon adobo sauce
  • 4 garlic cloves
  • 1 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • black pepper freshly cracked
  • queeze of lime
  • plash of water

Instructions

  1. Combine all ingredients in a blender or food processor.
  2. Taste for heat and sweetness, adding additional chipotles and honey if you want.
  3. Serve immediately.  Store in an airtight container in the fridge where it will keep for at least a few days. 

Notes

  • Neutral oils can substitute olive oil for a milder flavor.
  • Removing chipotle seeds helps control the spiciness if desired.
  • Taste and adjust the heat and sweetness after blending to suit preference.
