  • 2 Roma tomato halved, medium
  • 2 white onion cut into wedges, small
  • 1 jalapeno pepper halved and seeded
  • 1 (15-ounce) can whole tomatoes drained
  • 1 clove garlic
  • cup cilantro fresh leaves
  • 3 tablespoons lime juice freshly squeezed
  • ¼ teaspoon cumin ground
  • ¼ teaspoon sugar optional
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground
  • tortilla chips for serving

Instructions

  1. Heat a large cast iron skillet over medium high heat. Add tomatoes, onions and jalapeno until charred on all sides, about 5 minutes.
  2. Combine charred tomatoes, onions, jalapeno, canned whole tomatoes, garlic, cilantro, lime juice, cumin and sugar (if using) in the bowl of a food processor until desired consistency is reached, about 5-10 minutes. Season with salt and pepper, to taste.
  3. Serve with tortilla chips.
