Ingredients
- 1 cauliflower cut into florets, large head
- 2 garlic minced, cloves
- 2.5 tbsp extra virgin olive oil

- 1/2 tsp black pepper
- 1 tbsp lime juice (1 medium to large lime)

Instructions
- Preheat oven to 200°C/390°F.
- Place cauliflower in a large bowl. Drizzle over oil, sprinkle with garlic. Use hands to mix and rub oil over all cauliflower.
- Sprinkle over chipotle, salt and pepper. Toss to coat.
- Spread out on tray. Bake 25 minutes, tossing once, until the edges are caramlised and cauliflower is just tender.
- Remove from oven. Push cauliflower together, drizzle over lime juice.
- Sprinkle with coriander and serve hot.
Notes
- Chipotle powder is dried and smoked jalapeño pepper powder that provides smoky and mild heat.
- If concerned about spice, substitute chili powder or a spice blend of smoked paprika, cumin or coriander, and cayenne pepper.
