Chipotle Peppers in Adobo Sauce
Description
The recipe starts by reconstituting dried smoked chipotle peppers in boiling water until softened and then draining them thoroughly. The prepared peppers are then simmered briefly in a pre-made homemade adobo sauce, allowing the peppers to soak in the tangy, spicy flavors of the sauce. This simmering step melds the smoky pepper character with the adobo’s blend of ingredients.
After cooking, the hot chipotle peppers and sauce mixture is jarred in sterilized containers and cooled completely. Refrigerating for several days enhances flavor melding and mellowing, ensuring a well-integrated condiment. Proper storage extends freshness for several weeks, with periodic checks for spoilage recommended. Freezing is an alternative preservation method, allowing long-term storage without loss of flavor.
Having homemade chipotle peppers in adobo ready provides a handy, flavor-packed ingredient to enhance stews, sauces, marinades, and more, bringing authentic smoky heat to meals with ease. Creating both components—the smoked chipotles and the adobo sauce—ahead of time adds convenience to using this flavorful staple.
Ingredients
- 1 batch adobo sauce click link for recipe, homemade
- 24 chipotle peppers click link for recipe, smoked
Instructions
- Reconstitute the smoked chipotle peppers: Place the chipotles in a large bowl and pour boiling water over them until they are submerged. Let them sit until cooled. Then very thoroughly drain them to remove as much water as possible.
- Heat the adobo sauce in a large saucepan, add the drained reconstituted chipotle peppers, bring the mixture to a boil, reduce the heat and simmer for 10 minutes.Spoon the hot mixture into sterilized jars, close the lids, and let them cool completely. Transfer the jars to the fridge and let them rest for several days before using to give the chipotles time to absorb the sauce and allow all the flavors to meld. These DIY chipotle peppers in adobo sauce will keep in the fridge for at least a few weeks. Just check them periodically for any signs of mold or off odors. Alternatively they can also be frozen (see my "Storage" tips in the blog post above).
Notes
- Both smoked chipotle peppers and adobo sauce can be prepared ahead and combined when ready for convenient use.
- Store the chipotle peppers in adobo sauce in sterilized jars in the refrigerator for several weeks; check occasionally for spoilage.
- Freezing is a suitable option for longer storage without flavor loss.
