Chocolate Almond Butter Oatmeal Bites

Chocolate Almond Butter Oatmeal Bites combine old-fashioned oats, cocoa powder, shredded coconut, almond butter, and honey into no-bake energy balls. The mixture forms a firm, chewy bite-sized snack with chocolate flavor, nutty richness from almond butter, and subtle sweetness from honey. Chilled briefly to set, these bites are convenient for a quick snack or light treat.

Description

This recipe blends oats, unsweetened cocoa powder, and shredded coconut with creamy almond butter and honey. The mixture's sticky texture helps in rolling it into firm balls that hold together well after chilling. The cocoa powder provides a natural chocolate note without added sugar beyond the honey. The shredded coconut adds slight texture contrast and contributes natural sweetness.

These bites do not require baking and involve simple mixing and shaping, making them accessible and quick to prepare. They are portable and can serve as a grab-and-go snack to provide energy and satisfy mild chocolate cravings. The recipe invites children’s involvement in preparation due to its hands-on nature.

Variations include substituting almond butter with peanut butter, sunflower butter, or cashew butter, and using maple syrup or stevia instead of honey for dietary preferences. This flexibility allows accommodating different taste profiles or dietary needs.

Ingredients

Servings
  • 1 cup old fashioned oats
  • 2 tablespoon cocoa powder unsweetened
  • 2 tablespoon coconut unsweetened, shredded
  • ½ cup almond butter natural
  • ¼ cup honey

Instructions

  1. Mix the oats, cocoa powder and coconut together in a bowl.
  2. Add the almond butter and honey and mix until completely blended. I used my hands and it felt like I was playing with play dough LOL! Kids would love to help with this part!
  3. Pick off about a 1 inch piece and roll into little balls.
  4. Chill for about 15 minutes and serve.

Notes

  • Use your preferred nut or seed butter such as peanut, sunflower, or cashew butter in place of almond butter.
  • Maple syrup or a few drops of liquid stevia can substitute honey for vegan or alternative sweetener options.
