Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder unsweetened
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 1/4 cup sour cream
  • 1 egg large
  • 1 teaspoon vanilla extract
  • banana 12 oz peeled, mashed, about 3 medium
  • 1/2 cup miniature chocolate chips

Instructions

  1. Preheat the oven to 350ºF. Spray 12 muffin cups with nonstick cooking spray or line with cupcake liners.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the sugar, oil, sour cream, egg, and vanilla.
  4. Add the wet ingredients to the dry ingredients and stir together until the mixture is almost combined. Add the mashed bananas and stir into the batter. Pour in the chocolate chips and stir just until combined.
  5. Divide the batter evenly between the 12 muffin tins. They will be mostly full. Transfer the tin to the oven and bake for about 20 minutes, or until a tester inserted in the center comes out with a few moist crumbs on it.
  6. Let the muffins cool for a few minutes before removing from the tin.
