Chocolate Banana Oatmeal Breakfast Bars

Chocolate Banana Oatmeal Breakfast Bars blend ripe bananas, almond butter, oats, and cocoa powder into baked bars with a chewy texture and chocolate flavor. Optional chocolate chips add bursts of sweetness, making these bars a convenient, hearty choice for a snack or breakfast on the go.

Description

The bars start by mashing ripe bananas and mixing in creamy almond butter; optional maple syrup can be added for extra sweetness. Dry ingredients including quick oats, cocoa powder, sea salt, and optionally cinnamon are stirred into this wet mixture until thick. Chocolate chips can be folded in to boost chocolate flavor and texture.

The mixture is spread evenly in a parchment-lined pan and baked until the edges set and the bars hold together. Cooling to room temperature before slicing ensures clean cuts and a firm texture. The natural sweetness from bananas and optional sweeteners balances the cocoa's bitterness.

These bars can be served as a convenient breakfast, a snack, or lunchbox addition. Variations include substituting almond butter with peanut or sunflower seed butter. Without chocolate chips, adding a bit of brown sugar helps achieve the desired sweetness.

Ingredients

Servings
  • 3 large banana 1 ½ cups mashed, ripe
  • ½ cup almond butter creamy
  • 1 1/2 cups quick oats
  • cup cocoa powder
  • 1/2 cup to 1 cup chocolate chips optional**
  • ¼ tsp salt to taste, sea salt

Optional Additions:

  • 2 Tbsp pure maple syrup
  • 1 tsp vanilla extract pure
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a 8-inch square baking pan with a piece of parchment paper.
  2. Mash the ripe bananas in a large bowl until creamy. Stir in the almond butter (and pure maple syrup if adding) and mix until the wet ingredients are well-combined.
  3. Add the quick oats, cocoa powder, sea salt (and cinnamon if adding) to the mixing bowl (the dry ingredients). Mix until a thick batter forms. Stir in the chocolate chips if you’re adding them.
  4. Transfer the chocolate banana oat mixture to the prepared baking dish and spread it into an even layer. If desired, sprinkle with extra chocolate chips.
  5. Bake on the center rack of the preheated oven for 12 to 16 minutes, or until the sides have firmed up (I bake mine for 15 minutes).
  6. Allow the chocolate oatmeal bars to cool to room temperature before slicing and serving.

Notes

  • Peanut or sunflower seed butter can replace almond butter as a substitute.
  • Without chocolate chips, add 2 to 3 tablespoons of brown sugar to increase sweetness.
  • Bars have chewy texture from oats and bananas, balanced by cocoa and optional cinnamon.
