Ingredients

Servings

For the chocolate cauliflower ice lollies:

  • 150 g (5.3oz) cauliflower florets
  • 400 ml (14oz) can of coconut milk
  • 200 g (7oz) soft pitted dates soaked in warm water for 10 mins
  • 30 g (1oz) unsweetened cocoa powder

To decorate:

  • 35 g (1.3oz) dark chocolate, melted
  • 50 g (1.7oz) sprinkles

Instructions

Make the chocolate cauliflower ice lollies:

  1. Steam the cauliflower until just soft, then rinse under a cold water to stop it cooking and drain well.
  2. Add the cauliflower and all the other ice lolly ingredients in a high-speed blender and whizz until smooth. Pour into the ice lolly moulds and freeze for 1 hour.
  3. Remove from the freezer, add in the lolly stick and freeze until solid.

To decorate:

  1. Dip the ice lollies into melt the chocolate and then the sprinkles before serving.
