Chocolate Cherry Energy Bites

Chocolate Cherry Energy Bites combine chopped almonds, walnuts, dried cherries, Medjool dates, cocoa powder, and semi-sweet chocolate chips into small, sticky balls. The mixture is pulsed until it holds together, with water added as needed for moisture, creating bite-sized snacks that balance a mild saltiness with fruity and chocolate flavors. These no-bake energy bites are portable and convenient for quick snacks or after-dinner treats.

Description

The Chocolate Cherry Energy Bites blend several types of nuts and dried fruit, pulsed together to form a sticky, textured base enhanced by cocoa powder and a touch of sea salt. Adding chocolate chips last provides bursts of semi-sweet richness. Rolling the mixture into small balls ensures easy snacking and portion control. The natural chewiness comes primarily from the Medjool dates and dried cherries, while the nuts provide a contrasting crunch. The bites do not require baking and can be stored chilled to maintain firmness and flavor balance.

They are ideal for a portable, wholesome snack that can be eaten on the go or as a light sweet option after meals. The combination of nuts and dried fruit offers energy-sustaining qualities without heavy preparation.

Adjusting the water content during processing helps achieve the right consistency for rolling. Using a small amount of salt enhances the flavor complexity by balancing sweetness and deepening the chocolate note. The recipe allows some flexibility in nut choice while keeping the base texture intact.

Ingredients

Servings
  • 1 cup almond or cashews, raw unsalted
  • ½ cup walnuts raw, unsalted
  • ¾ cup dried cherries
  • 9 date approx. 4 ounces) pit removed, large, Medjool
  • 2-3 TBSP water or cherry juice
  • 1 TBSP cocoa powder unsweetened
  • tsp salt sea salt
  • ¼ cup chocolate chips mini, semi-sweet

Instructions

  1. Pulse almonds and walnuts in a food processor until finely chopped.
  2. Next add dates, dried and fresh cherries, cocoa powder, and salt. Add 1 TBSP of water and pulse mixture. Depending on how dry/juicy your dates and dried cherries are, you may need to use an additional 1-2 TBSP of water to moisten the mixture and help it blend well. Pulse/blend until the mixture is well-incorporated and a bit sticky.
  3. Remove the mixture from the processor, spread onto a piece of wax/parchment paper or cutting board and fold/knead in the chocolate chips.
  4. Scoop into 1.5-2 TBSP portions, gently squeeze, then roll into balls.
  5. Leftovers can be stored in the refrigerator for 4-5 days. They taste great chilled and the flavors are even more pronounced when thawed to room temperature. Grab a few to go or munch on one or two as a sweet treat after dinner. Either way, you won't be able to keep your hands off these balls!

Notes

  • Salt enhances the flavor; adjust the amount to your taste preference.
  • Use quality Medjool dates for better sweetness and moisture.
  • Feel free to substitute cashews or almonds for walnuts based on preference.
  • The bites can be stored in the refrigerator for up to 5 days and are best enjoyed chilled or at room temperature.
  • Add a little honey if you want a sweeter treat.
