Chocolate Chip Baked Oatmeal

An easy make-ahead oatmeal breakfast casserole filled with all the flavors of classic chocolate chip cookies.

Ingredients

  • 4 large egg
  • 3 1/2 cups milk whole
  • 1 teaspoon vanilla extract
  • 6 cups rolled oats whole
  • 2/3 cup brown sugar
  • 3/4 teaspoon salt
  • 1 teaspoon baking powder
  • 6 tablespoons butter diced
  • 1/2 cup chocolate chips semi-sweet

Instructions

  1. Butter a 9x13" baking dish.
  2. In a large bowl, whisk together the eggs, milk and vanilla. 4 large eggs, 3 1/2 cups whole milk, 1 teaspoon vanilla extract
  3. Add in the oats, brown sugar, salt, baking powder, butter and chocolate chips. 6 cups whole rolled oats, 2/3 cup brown sugar, 3/4 teaspoon salt, 1 teaspoon baking powder, 6 tablespoons butter, 1/2 cup semi-sweet chocolate chips
  4. Stir all the ingredients together until well combined, then pour into the prepared baking dish. 
  5. Cover and refrigerate overnight or at least 6 hours.
  6. Preheat oven to 375ºF. Bake casserole for 30-40 minutes. The oatmeal should firm up and liquid will be absorbed.
  7. Serve with butter, pure maple syrup and extra milk or cream.
