Chocolate Chip Banana Bites

Chocolate Chip Banana Bites combine rolled oats, ripe banana, cinnamon, ground flaxseed, and sweeteners into small no-bake bites studded with chocolate chips. The texture balances between chewy oats and soft banana, with a mild warmth from the cinnamon. These bites set in the fridge, making them a handy snack option that doesn't require baking and uses simple pantry staples.

Description

Chocolate Chip Banana Bites are small, energy-rich snacks made from blended and whole rolled oats mixed with mashed ripe banana, a touch of cinnamon and salt, ground flaxseed, and a blend of agave or maple syrup with coconut oil. Vanilla extract adds aroma and sweetness, while chocolate chips provide bursts of chocolate throughout. The oats give a chewy yet tender bite, while the banana binds the mixture without needing eggs or flour. Once formed into balls, they chill in the refrigerator to firm up, making them convenient to prepare ahead.

This recipe relies on blending most oats into a coarse meal texture, preserving some whole oats for bite contrast. The cinnamon adds warmth, and the ground flaxseed enriches with a nutty note and binding power. The bites can be sweetened with liquid sweetener like maple or agave syrup and carry a subtle coconut oil richness.

These bites are well-suited as grab-and-go snacks or light sweet treats without baking involved. The size and no-cook assembly make them quick to prepare and good for storing in the fridge for a few days.

The notes suggest variations like adding nutmeg, dried fruits for extra chewiness, nuts for crunch, peanut butter for added flavor, or using vegan chocolate chunks or a glaze to increase the chocolate component, allowing some flexibility in customization.

Ingredients

Servings
  • 1 cup rolled oats divided, of
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • 1 Tablespoon ground flaxseed
  • 1 teaspoon vanilla extract
  • 2 Tablespoons of liquid sweetener I use an agave/ maple syrup mixture
  • 2 Tablespoons coconut oil melted
  • ½ banana ripe
  • ¼ cup rolled oats left un-blended, of
  • ¼ cup chocolate chips or cacao nibs to make it raw

Instructions

  1. Take the first 3/4th cup of rolled oats and blend in a blender or food processor to make a course oat meal. It doesn't need to be as fine as oat flour though.
  2. Add the remaining ingredients except the chocolate chips and blend or process them again.
  3. Stir in the chocolate chips and 1/4 cup of the whole rolled oats.
  4. Form balls and put them in the fridge to set.

Notes

  • Enhance these bites by adding spices like nutmeg, ginger, or cloves alongside the cinnamon.
  • Incorporate chopped nuts such as walnuts, almonds, or cashews for extra texture and crunch.
  • Add dried fruits like raisins or cranberries for a tart chewiness.
  • Mix in peanut butter for flavor pairing with banana and added richness.
  • Use vegan chocolate chunks instead of chips or drizzle with a vegan chocolate glaze before chilling to increase chocolate intensity.
