Chocolate Chip Cookie Bars

These Chocolate Chip Cookie Bars use a melted butter batter combined with brown and granulated sugar, eggs, and vanilla, then mixed with a flour blend including cornstarch and baking powder. Semisweet chocolate chips are folded in before baking in a lined pan, creating bars with golden edges and a soft, chewy center. The bars are slightly thicker than cookies and can be baked in different pan sizes for varied thickness and cooking time.

Description

The recipe starts with melted, cooled butter combined thoroughly with sugars to create a rich base. Eggs and vanilla add moisture and flavor. The dry ingredients—flour, cornstarch, baking powder, and salt—are whisked together separately then gradually folded in, maintaining a tender crumb aided by the cornstarch. Mixing chocolate chips into the batter introduces melty pockets of chocolate throughout.

Baked in a 9x9 inch pan lined with parchment or lightly greased, the bars develop golden edges after about 35 minutes at 350°F, with a slightly soft center when appropriately timed. Cooling before cutting prevents the bars from crumbling but serving them warm enhances their soft texture.

Variations include baking in a 9x13 pan, which results in thinner bars requiring shorter baking. Baking times can vary depending on pan material; a toothpick test is recommended. Bars store well in airtight containers for days and can be frozen for longer storage.

Ingredients

Servings
  • 1 cup butter melted and then cooled for at least 5 minutes, unsalted
  • 1 cup light brown sugar firmly packed
  • ¾ cup granulated sugar
  • 2 large egg room temperature preferred, + 1 large egg yolk
  • 1 ½ teaspoons vanilla extract
  • 2 ¼ cups all-purpose flour
  • 2 teaspoons cornstarch (cornflour in the UK)
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips

Instructions

  1. Preheat oven to 350F (175C) and prepare a 9x9" (23x23cm) pan (see note) by lining with parchment paper (or lightly grease and flour).
  2. Combine melted (cooled) butter and sugars in a large bowl, stir well.
  3. Add eggs, egg yolk, and vanilla extract and stir until well-combined.
  4. In a separate, medium-sized bowl, whisk together flour, cornstarch, baking powder, and salt.
  5. Gradually stir dry ingredients into wet until completely combined. Stir in chocolate chips.
  6. Spread batter evenly into prepared pan. Bake on 350F (175C) for 35 minutes or until edges just begin to turn golden brown.
  7. Allow to cool before cutting and serving (don't cool too long, though -- these are amazing when served still slightly warm!)

Notes

  • Use a toothpick to test for doneness as baking times vary with pan size and material.
  • Storing in an airtight container at room temperature keeps bars fresh for up to 5 days.
  • The bars also freeze well; thaw overnight before serving.
  • Baking times are shorter in larger pans and longer for ceramic or glass pans.
